What is splitting — and why is “leather” only half an answer?
A cattle hide is 5 to 10 millimetres thick. Almost no product wants that. A shoe upper, a bag, a car seat — they need 1 to 2 millimetres. So before a hide becomes any of these things, it goes through one of the most impressive machines in the tannery: the splitting machine.
What the machine does
A band knife — a blade running as an endless loop, like a horizontal band saw — moves through the hide in the plane of its surface, guided by calibrated rollers. The hide goes in as one layer and comes out as two:
The grain split: the upper layer, carrying the natural grain surface. Its fibre structure is the densest part of the hide, which makes it the strongest and most tear-resistant — and the one with the face people recognise as leather.
The flesh split: the lower layer. Rough on both sides, softer, less dense. It becomes suede — or it is coated and embossed until it looks like something it is not. More on that in a moment.
With very thick hides there can be a third, middle layer — rare, but it exists.
When does this happen? It varies, and that detail matters more than it seems. Splitting can happen before tanning, on the limed hide; wet after tanning; or at the end of the process, dry. At Horween in Chicago, where we filmed, strips were split after tanning — so every piece enters hot stuffing at exactly the same thickness. Same machine, different logic: sometimes you split for the product, sometimes for the process. The machine operator also has to out-think the water: a wet hide carries about three times its dry weight in water and is thicker for it, so the blade is set for what the leather will measure once dry — not for what passes through the rollers.
Where the words start doing tricks
Inside the tannery, the vocabulary is honest: grain split, flesh split. Everyone knows which is which.
Outside the tannery, the words change. The grain split is sold as smooth leather, aniline, nappa. The flesh split becomes “suede” — or, coated and embossed with an artificial grain pattern, it becomes something the untrained eye cannot tell from grain leather. And here the labels stop answering questions: coated splits are routinely sold as just “leather” or “genuine leather”.
The honest part
Even the norms disagree. One German trade standard (RAL 060 A2) allows a split to be called simply “leather”. The European norm DIN EN 15987 says the opposite: a split must be declared as a split. Two rulebooks, two answers, one label. Which is why “genuine leather” on a product tells you almost nothing about which layer of the hide you are holding — and why, for a car interior or a sofa, it is worth having the material named in writing.
To be clear: a split is not a scam. It is real leather, from a real hide, doing real work — suede exists because of it, and the layers that cannot become leather become gelatine and collagen. A hide used layer by layer, with nothing thrown away, is the opposite of waste. The problem is never the split. It is the label that hides it.
Why this belongs on a page about clean leather
Because this is the pattern this whole site is about, one processing step earlier. A word — “leather”, “genuine leather”, “chrome-free”, “vegetable-tanned” — sounds like an answer and isn’t one. The question that settles it is always the same: what exactly is this, and can it be named in writing? For the layer of the hide, just as for the chemistry that tanned it.
